CHICKEN ENCHILADA SOUP

serves 8
recommended sides: cornbread, tortilla chips, diced avocado, sour cream, shredded cheeseINGREDIENTS:
1 can black beans, rinsed
1 can diced tomatoes
1 can corn
½  onion, chopped
½ cup bell pepper, chopped
1 can enchilada sauce
1 can cream of chicken soup
1 1/2 cups milk
4 chicken breasts (optional)

In a crock pot place beans, tomatoes, corn, onion and bell pepper.  Place chicken on top.  Mix enchilada sauce, cream of chicken soup, and milk and pour over top. Turn crock pot on low and cook for 4-6 hours.  Remove the chicken, cut or shred it, and then add back in. 


Freezer Meal: Mix beans, tomatoes, corn, onion and bell pepper together.  Place in bottom of zip lock.  Place chicken on top.  Mix enchilada sauce, cream of chicken soup, and milk and pour on top. Freeze.  Place in crock pot for 6-8 hours on low.  Once all cooked, remove chicken and cut up or shred.  Add back into the pot.
