BLUEBERRY FRENCH TOAST

serves 8
recommended sides: bacon, sausage, fruit saladINGREDIENTS:
2 loaves French bread
8 eggs
2½ cups milk
2/3 cup brown sugar
2 teaspoons vanilla extract
1½ teaspoons cinnamon
¼ teaspoon salt
2 cups blueberries, rinsed and dried
¼  cup butter, melted
¼  cup maple syrup

Arrange bread slices in a glass casserole dish.  Whisk together eggs, milk, brown sugar, vanilla, cinnamon, and salt.  Pour over bread evenly. Toss blueberries over evenly.  Drizzle syrup and butter on top. Bake at 375 degrees for 30-35 minutes.


Freezer Meal: Cover with plastic wrap and foil, then freeze.  Thaw overnight and bake at 375 degrees for 30-35 minutes.
