makes about 2 dozen mini-muffin size biscuits, or 1 dozen cupcake size
INGREDIENTS:
1 cup shredded cheese with a strong flavor, such as sharp cheddar, pepper jack, mango jalepeno etc.
1/2 cup flour
1 teaspoon baking powder
1 pinch dry mustard powder, garlic powder or other desired seasoning
enough milk to make a sticky dough
Preheat oven to 425 degrees. Combine all dry ingredients in a bowl with a wooden spoon. Add the milk a little at a time and mix well until the dough is sticking together and is pretty sticky, but not too wet. Bake in un-greased muffin tins for 9-10 minutes or until golden brown.
These freeze really well and are easily defrosted in the microwave for just a few seconds. You can also reheat them after they've been made for just a few seconds in the microwave.
