makes 2 loaves
INGREDIENTS:
¼ cup gluten
2 tablespoons yeast
3 ½ cups whole wheat flour
2 2/3 cup hot water
Preheat oven to 170 degrees.
Combine above ingredients in mixing bowl of a stand mixer and and let sponge for 10 minutes.
Add ½ cup oil
1/8 cup honey
1/8 cup molasses
1 tablespoon salt
3 1/2 - 4 cups flour
Mix using dough paddle until dough cleans the bowl, switching to dough
hook when dough begins to stretch. Mold
into 2 loaves. Put in 170 degree
oven. Let rise for 30 minutes. Increase heat to 350. Bake for 27 minutes.
