VEGGIE CASSEROLE

serves 10
INGREDIENTS:
4 cups assorted cooked vegetables of your choice, such as:

broccoli, cauliflower, baby brussel sprouts, carrots
1 can cream of mushroom soup
1/2 cup sour cream
1 cup shredded swiss cheese, divided
pepper to taste
1 large french fried onions, divided


Combine vegetables, soup, sour cream, pepper, half the swiss cheese and half the fried onions. Spread into a 9x13 glass casserole dish. Bake at 350 degrees for 30 minutes. Top with remaining onions and cheese and bake for an additional five minutes.
