2 ears corn, cooked, kernels cut off, or 1 can of corn
½ red pepper, diced
2 cloves minced garlic
1 tablespoon minced shallot
1 teaspoon salt
¼ teaspoon cayenne (red) pepper
1 teaspoon sugar
1 ½ tablespoons olive oil
zest of one lime
juice of a fresh lime
¼ cup chopped cilantro
1 avocado, diced
½ red pepper, diced

Mix all ingredients except avocados. Rest overnight in fridge. Add avocado right before serving.
