SCALLOPED POTATOES

serves 8
INGREDIENTS:
10 large potatoes, hand or food-processor sliced into lengthwise strips, about 1/8th inch thich
1 large onion, diced
salt and pepper
2 cups heavy cream
1 1/2 cups shredded cheddar cheese

Grease a glass 9x13 baking dish with butter.  Layer the potatoes in the bottom, sprinkle generously with onion, salt and pepper.  Repeat the layers until dish is full.  Pour cream over top and cover tightly with foil.  Bake at 350 degrees for at least 90 minutes, or until a knife inserted in the middle goes through soft potatoes.  Remove foil, sprinkle with cheese and bake an additional 5-10 minutes.
