VEGAN CHILI

recommended sides: salad, roasted veggies, cornbread, baked potatoesINGREDIENTS:
Prepare spelt/wheat berries for use as follows:
In a large pot, combine:
1 cup spelt/wheat berries
2 cups water
Bring to a boil.  Cover and reduce heat.  Simmer for about 45 minutes (until liquid is absorbed).
To approximately 3 cups cooked spelt/wheat add together in a large pot with:
1 cup water
3 cubes/teaspoons (vegetarian) beef-flavored bouillon.
Bring to a boil.  Cover and reduce heat.  Simmer for about 30 - 45 minutes (until liquid is absorbed).
Meanwhile, cook beans:
In a large pot, combine:
1 cup dried small red beans
3 cups water
Bring to a boil.  Cover and reduce heat.  Simmer for about 2 hours.  Drain and combine with spelt/wheat berries and add:
2 cups salsa               
1½  tablespoons sugar
3 tablespoons chili powder
Simmer covered for 45 minutes to an hour.
