SPELT/WHEAT BERRIES PILAF

serves 8
recommended sides: salad, roasted veggies, marinated portobello mushroom cups
INGREDIENTS:
Prepare spelt/wheat berries as follows:
In a large pot, combine:
1 cup spelt/wheat berries
2 cups water
Bring to a boil.  Cover and reduce heat.  Simmer for about 45 minutes (until liquid is absorbed).
In a large skillet combine:
1 – 1½ cups water:
a handful or two of freeze-dried peas (or frozen)
a handful or two of freeze-dried diced carrots (or frozen)
less than a full handful of dehydrated onions
3 cubes/teaspoons (vegetarian) chicken-flavored bouillon 
Bring to a boil.  Then add about 3 cups cooked spelt/wheat berries.  Cover, reduce heat, and let simmer about 10 – 15 minutes.  Then stir in about 2 tablespoons of oil.  Cover and let simmer another 10-15 minutes.
