CHUNKY VEGETABLE CHILI

serves 10
recommended sides: cornbread, rolls, wheat bread with honey butter; suggested toppings include shredded cheese, sour cream, oyster crackers, raw diced onion
INGREDIENTS:
2 zucchini
2 yellow squash
1 green pepper
1 red pepper
small onion
3-4 carrots
2 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon ground cumin
1/2 teaspoon cayenne (red) pepper (add more or less according to heat preference)
2 14.5oz cans mexican-style stewed tomatoes
1 can great northern beans
1 can black beans

Dice and chop all fresh vegetables to desired shape and size.  Combine all ingredients in crock pot.  Cook on low 8 hours.
