CHICKEN POT PIE

serves 6
recommended sides: crusty bread, spinach and strawberry salad, stuffing, steamed broccoli
INGREDIENTS:
2 pie crusts
1lb chicken, cooked and chopped
1 bag of frozen mixed veggies, thawed
2 cups chicken broth
¼  cup butter or oil
¼ cup flour
1 teaspoon thyme
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic salt

Place bottom pie crust in pan.  Cover with cooked chicken and veggies.  To make the sauce: melt the butter and add flour, cook for a couple of minutes over medium heat.  Pour in the chicken broth and whisk vigorously over medium high heat until thickened.  Season to taste.   Cover with remaining pie crust, poking a few vent holes in the top.  Cover the edges of the crust with tin foil and bake at 400 degrees for 30 minutes.  Uncover edges and bake 10-15 minutes more.

Freezer Meal: cover with plastic wrap and foil.  Remove from freezer, uncover, and bake at 450 degrees for 45 to 60 minutes.
