APPLE AND SAGE PORK CHOPS

serves 4
recommended sides: mashed potatoes, roasted or steamed veggies
INGREDIENTS:
1 ½ teaspoons rubbed sage
1 teaspoon minced garlic
1 teaspoon dried thyme
½ teaspoon ground allspice
½ teaspoon paprika
1 tablespoon flour
1 teaspoon salt
Combine above ingredients.  Sprinkle both sides of chops with seasoning.
4 boneless chops, 1" thick
2 tablespoons olive oil
Fry chops until browned.  Set aside.
1 onion sliced
2 red apples sliced thinly
½ C apple juice

Fry onions for 3 minutes.  Add apples, fry 2 more minutes.  Stir in juice and remaining flour.  Add chops back to skillet.  Cover and simmer 5 minutes.
