1 1/2 lb cod or other flavorful white fish, boneless fillets
3 cups milk
2 tablespoons butter
2 tablespoons flour
1 cup shredded cheddar cheese (a sharp white cheddar is excellent)
6 potatoes, boiled and mashed with butter and milk
breadcrumbs

Poach the fish fillets in a gently simmering pan of milk, about 7 minutes. While the fish is cooking, melt the butter in a saucepan. Add the flour and whisk until combined in a smooth paste. Cook over medium heat for 2 minutes, stirring constantly. Remove from heat. Preheat oven to 350 degrees.
Reserving the milk when you drain the cooked fish, add the milk to the cooked roux (butter and flour), whisking constantly to avoid any lumps, until smooth. Place back on heat and bring to a boil, stirring frequently until thickened. Remove from heat and add the shredded cheese, with salt and pepper to taste. Place the fish in a greased casserole dish, top with mashed potatoes and sprinkle with breadcrumbs and cheese. Bake for 10-15 minutes until heated through and cheese is browned.
