CAJUN BACON PENNE

serves 8
recommended sides: salad, seasonal veggies, garlic or other bread
1 16 oz package penne or other small pasta
15 bacon rashers, cooked & crumbled, 2 tablespoons of grease reserved
1 cup mushrooms, sliced
2 cloves garlic, minced
1 cup parmesan cheese
2 cups cream
1 tablespoon cajun seasoning (adjust this quantity if you prefer less spice)
½ cup green onion, sliced thinly

While pasta is boiling, saute mushrooms & garlic in two tablespoons of reserved bacon grease. Stir in cream, parmesan cheese and seasoning.  Simmer on low until the sauce has thickened.  Add pasta and stir to coat in sauce.  Just before serving add bacon and green onion.
