INGREDIENTS:

large acorn squash
½ onion, chopped
4 oz mushrooms
¾ cup ricotta cheese
¼ cup grated swiss cheese
1 egg
½ teaspoon ground nutmeg
salt and pepper
¼ cup breadcrumbs (optional)
Cut a small slice off one side of squash so they’ll sit flat. Cut squash into half and scoop out innards. Combine remaining ingredients except bread crumbs. Spoon into squash. Sprinkle with bread crumbs. Cover and refrigerate until ready to
bake. Bake at 375 degrees for 60-75 minutes.
