INGREDIENTS:14 red bliss potatoes, about 2 ½ lb
6 slices bacon, crumbled (optional)
6 hard-boiled eggs, chopped (optional)
1/3 cup red onion, finely chopped
2 tablespoons parsley leaves
1 teaspoon salt
1 teaspoon pepper
1/2 cup ranch dressing
1/2 cup blue cheese dressing
Cook the potatoes and then cut into halves. Combine dressings together and mix all ingredients while potatoes are warm. Refrigerate overnight to allow flavors to combine.
