INGREDIENTS:
1 lb canned pumpkin (NOT pumpkin pie filling)
2 potatoes, peeled and boiled
1/2 chopped onion
2 cups whole milk
2 cups chicken or veggie stock
3 tablespoons minced parsley
2 tablespoons butter
salt
pepper
cinnamon
Saute onion in butter until soft. Add remaining ingredients and cook until warmed through. Process in batches through a blender until smooth. Return to heat and season to taste with salt, pepper and cinnamon.
