INGREDIENTS:
6 cups chicken broth
1 chopped onion
5 large potatoes, peeled and diced
1/2 cup butter
1/2 cup flour
4 cups half-and-half
salt and pepper
toppings (optional): shredded cheddar cheese, sliced green onions, bacon bits
Boil broth, onion and potatoes until they are soft. In the meanwhile, make a white sauce with the butter, flour and half-and-half. Pour the sauce into the broth. Stir well and season liberally with salt and pepper.
