INGREDIENTS:
5 lb carrots, peeled, washed and dried (cut length wise if they are thick)
1/2 cup mayo
1 tablespoon dried onion
salt and pepper
1/4 cup crushed crackers (ritz, club etc.)
Boil carrots until tender, but not too soft, about 20 minutes. Drain and reserve 1/4 cup of the liquid. Mix the liquid with the mayo, onions, salt and pepper to taste. Place carrots in an oven-proof dish and pour sauce over. Top with crushed crackers. Bake for 15 minutes at 350 degrees.
